such as decorations, rent, and staffing, as well as variable costs such as cups, lids, milk or cream,
and ice (for iced beverages). Full-service and specialty cafés typically incur higher fixed costs
than kiosk-style vendors, which is why their coffee tends to be priced higher.
10.3 Social Enterprises in the Coffee Production Chain
Table 10.3 presents a list of registered social enterprises involved in the coffee sector. In addition,
a number of social enterprises agreed to participate in interviews, as listed in Appendix 1.1.
Based on these interviews and various secondary sources, the motivations that drive social
enterprises to enter the coffee business can be summarized as follows:
